Feel free to improvise with what you have on hand too. Kiwi can be substituted for another fruit, greens can also be 3 stalks of celery, and lemon can be an orange.

My go-to, ready in 5 minutes salad is as followed:
-some leafy greens (romaine, kale, spinach, and/ or arugula)
-baby tomatoes cut in half
-cucumber cut in slices
-1/2 avocado in cubes
-2 mini bell peppers/ 2 radishes sliced
BONUS: add in shaved carrots and fresh herbs (basil, parsley, or coriander)
Mix the dressing in a small bowl:
- 1 tbs ancient mustard
-1 tbs apple cider vinegar
-1tb olive oil
-salt+ pepper
-a bit of water
Stir the dressing in the salad and you are ready for a healthy, nutrient packed delight!

Turn on oven for 400F.
In a sheet pan, add in frozen salmon (or other fish/ meats), and frozen vegetables such as asparagus, broccoli, cauliflower, etc.
I love to add sweet potatoes or mini potatoes on the pan along side some sliced onions to roast.
Cover everything with a drizzle of olive oil, some spices, and in the oven it goes.
You can add in a simple salad (listed here) for a delicious family-style meal.
This dressing is quick to make and taste delicious in most simple salads.
1tbs apple cider vinegar
1tbs extra virgin olive oil
dash of salt and cracked pepper
If I am baking fish, roasting potatoes, baking broccoli, or Brussel sprouts, I pretty much always use the same spices combo because it tastes so good.
